Try this tip for perfect crackling. Place the pork joint in a roasting tray. Pour a kettle of just boiled water over the skin just before you start roasting. Carefully take the pork back out of the roasting tin and pat dry the skin with paper towel. Rub in plenty of salt. Empty the water out of the roasting tin and put the pork back in. Roast the meat on high for about 20 minutes before turning down for the remaining time suitable for the joint (25 mins per 1lb/454g). Rest the meat for 10-15 mins before carving.
